Delightful flavour with a slight kick; not too spicy. Wonderful on toast or bagels, but also on ice cream, cheesecake or blintzes. The rhubarb, raspberries, and jalapeno peppers were all grown with love on our property using organic methods.

We don't dilute our jams with water and then use commercial pectin to make up for the minimal fruit. We concentrate the fruit and use some homemade apple pectin to provide a bit more firmness. Natural pectin requires sugar to properly gel. Using xylitol allows for some gelling, but these preserves are much less firm than sugar-laden jam. The lack of a firm gel is countered by just so much concentrated fruit.
